This is the blog of a once athletic and now overweight girl trudging through the trenches to regain her health, endurance and overall fitness. Having already lost over 120 lbs, I hope to encourage others, not only with the things I have learned through my mental and physical journey, but also inspire and provide tips toward conquering your own mountain and maintaining a healthy lifestyle.

WHY HAVE I NOT DONE THIS SOONER!  Wow.  1 tbps of Krema natural peanut butter (just fresh peanuts in the ingredients, no artificial sugars), almond breeze’s vanilla almond milk and chocolate shakeology.  So simple too and it is seriously amazing.  Tastes like I am drinking a peanut butter cup.  I don’t have a blender right now, so I was super worried that with my shaker cup, the peanut butter wouldn’t mix, but because it is much more smooth, it was amazing.  The best part is that this snack/meal fills me up and only cost me 335 calories and gave me 24 grams of protein.  For those of you who also drink shakeology, what are your favorite recipes that are do-able without a blender (because I could use some)?

I personally love chocolate, since it easily satisfies any chocolate cravings I might have. I am happy to say that, because of it, I have not eaten any chocolate in a few months.

I have actually never tried greenberry. I have heard some people LOVE it and others, it is just not their thing.

As for tropical strawberry…first off, I have to say that I love that it is vegan. I have not tried it yet, but mine will be in the mail soon. Will have some free samples to give away to, for those who would like to try it. Can’t wait to try it myself!

Came up with a new recipe tonight and it was AH-MAZING

You can still have little things you enjoy, just have them in moderation.  Like for instance, this has a small pinch of colby jack, three shredded fresh mozzarella pearls and fat free feta.

Tuna, Hummus & Sweet Pepper Wrap

What you need:

-3-4 small sweet peppers (I used red, yellow and orange all from a cute little pack from the grocers)

-garlic gluten free hummus spread (you can use any type, I just prefer garlic)

- white albacore tuna in water (half a can or less)

-3-4 fresh mozzarella pearls

- a few pinches of fat free feta

- a pinch of colby jack cheese

- Mediterranean styled wrap in whole wheat (you can use tortillas, pita or anything similar as well)

Directions - Cut sweet peppers into strips and grill.  Spread hummus on bread and add all ingredients.  Place in microwave for 30 seconds.  Ready to eat!

This was super tasty for being so fast and easy!  Definitely going to make it again.  Its filling, overall, fairly healthy and does not take long to make if you need to make something in a hurry.

Hope you enjoy.  Let me know if you try it.  :)

My amazing snack for the day.  I usually prefer to spread it out a bit, which is overall, better for you, but I had so many lovely fruits!  I miss passion fruit from Australia so much, but I just had to buy some.  There is some red grapefruit, green apples, pineapple, strawberry and apricots.  You can eat healthy and keep it from being boring.  :)

What did you eat today?

I am a huge fan of eating and cooking with avocados.  They are the perfect natural butter, not to mention, they are very rich in antioxidants and fiber!  If your looking for a good alternative to butter, this is it.  I also tend to use it in place of ricotta cheese when making a thick, creamy sauce for pastas.  I find it works just as well without the added calories.  Instead you get heaps of great benefits while eating a tasty meal.

‘Avocados are high in valuable fats and appear to have a beneficial effect on blood serum levels.  About 75% of an avocado’s calories come from fat, most of which is monounsaturated fat.  Avocados also have 60% more potassium than bananas. They are rich in B vitamins, as well as vitamin E and vitamin K.  Avocados have a high fiber content among fruits - including 75% insoluble and 25% soluble fiber.  High avocado intake has been shown to have a beneficial effect on cholesterol levels.’
